Comment out the below lines in /etc/default/solr.in.sh

PATH="/usr/local/bin/tesseract:$PATH"

TESSDATA_PREFIX="/usr/local/share/tessdata"

Rename the file /usr/local/bin/tesseract to /usr/local/bin/tesseract_renamed

Restart Solr service
